ingredients
  • 5 oz. butter
  • 3 large eggs
  • 5 oz. caster sugar
  • 5 oz self rising flour
  • 1/2 tsp. baking powder
  • zest of one lemon
directions
  • prepare a Madeleine tray, melt a little extra butter and brush over the mould
  • melt butter and allow to cool a little
  • beat the eggs with sugar
  • fold in flour and baking powder
  • run half of the butter around the edge of the bowl with the egg mixture and mix in
  • repeat with the remaining butter and lemon zest
  • pour into pan  and bake
