ingredients
- 5 oz. butter
- 3 large eggs
- 5 oz. caster sugar
- 5 oz self rising flour
- 1/2 tsp. baking powder
- zest of one lemon
directions
- prepare a Madeleine tray, melt a little extra butter and brush over the mould
- melt butter and allow to cool a little
- beat the eggs with sugar
- fold in flour and baking powder
- run half of the butter around the edge of the bowl with the egg mixture and mix in
- repeat with the remaining butter and lemon zest
- pour into pan and bake
