Empanadas 

Ingredients                                               

Olive oil                                                                        1 Tbsp

Ground beef                                                                ½ lb

Onion diced                                                                 ¼ cup

Green chilies canned                                                 ¼ cup

Ground Chipotle powder                                         ¼ tsp

Pie Crusts                                                                    2 each      scratch or premade

Salt and pepper                                                          to taste

Egg wash                                                                     1 each

Pepper jack cheese grated                                      1 ½ cups

 

Chipotle Sauce 

Ingredients                                                               

Sour Cream                                                           ¾ cups

Dried Ancho chili peppers                                1 tsp

Chipotle pepper ground                                   ½ tsp

Green chilies                                                       2 Tbsp

Green onion minced                                         1 Tbsp

Garlic minced                                                    1 Tbsp

Tomato Paste                                                     1 Tbsp

Empanadas 

Heat the olive oil in skillet and sauté the ground beef and diced onions . Add green chilies, pepper, salt and ground chipotle powder. Cook until the beef is browned and the onions are transparent. Strain off any excess fat. Place one of the pie crusts onto surface and roll out to a circle about 12” in diameter. Cut 8 to 9  pastry rounds out of it, each measuring about 3 “in diameter. Repeat with the second pie shell you will now have 16- 19  pastry rounds. Moisten the edges of the pastry with water, place on half the pastry round about 1 to 1 1/2 Tbsp of the beef mixture and top with about 1 Tbsp of pepper jack cheese. Fold over the other half of the pastry and seal the edges with fork. Place empanadas on to cooking vessel.Brush each of empanadas with egg wash.

 

Chipotle Sauce

Combine all the ingredients and refrigerate until need.
