ingredients
  • 7 1/2 oz. 99% cocoa butter chocolate
  • 7 1/2 oz. 70% cocoa butter chocolate
  • 2 1/2 oz. butter
  • 4 yolks
  • 4 oz water
  • 13 egg withs
  • 1 cup sugar
  • 1 tsp. cream of tart
  • pinch of salt
directions
  1. Butter and sugar ramekins
  2. Melt butter and chocolate and combine well when melt and set aside to cool
  3. Mix water and egg yolks
  4. Stir yolk/water mixture into melted chocolate making sure chocolate is not to hot or too cold
  5. Whip egg whites until foamy then slowly add half of the sugar and cream of tart
  6. When almost full volume solely incorporated the other half of sugar
  7. Mix until glossy and medium soft picks form
  8. Fold egg white into chocolate trying not to deflate the mix
  9. With ice cream  scoop fill ramekins to the rim, wipe off all around the rim
