Flank steak is a delicious and lean beef. Ask your butcher to run it through the tenderizer also know as a jacaarding machine. This will make the steak easy to cut and very tender.
Turn Turbochef oven on and under ‘Bake’ on the cook wheel, select ‘COOKBOOK’; then under cookbook, select ‘Stuffed Flank Steak’. Press ‘START’ to begin the preheat cycle.
To prepare the flank steak; place the steak on a clean cutting board and top with leaves of fresh baby spinach, roasted red pepper(you can use the ones in the bottle or make your own) and top with blue cheese or goat cheese if you prefer. Sprinkle about ½ tsp salt and pepper over the filling. Roll the flank steak like a pinwheel and tie string around the rolled up steak to secure it in place. Place the beef, seam side down, in a ceramic oval dish and top with olive oil, and the remaining salt and pepper.
To bake the steak; Press ‘START’ again and bake under ‘Stuffed flank steak’ for 8 minutes for medium-rare beef. Use the ‘cook more’ function at the end of the cooking cycle if you want the beef more done. The outside of the beef will be roasted and dark; the inside should be tender and moist. Allow the beef to rest at least 5 minutes before cutting. Remove the string and cut into pinwheel pieces. Serve with stuffed portabella mushrooms or another favorite side dish.

- 2 ea. of Portabella mushrooms, large caps
- 3 tbsp. of olive oil
- 2 c. of fresh spinach, shredded
- 6 oz. of red onion, sliced into 1/8" strips and caramelized
- 4 to 5 slices of roasted red pepper
- 2 tsp. of fresh garlic, minced
- ½ tsp. of salt
- ½ tsp. of pepper
- ¼ c. of pine nuts
- ½ c. of Parmesan Reggiano cheese, grated
- ½ c. of Manchego cheese, shredded
Portabella Mushrooms have a very ‘meaty’ texture and pair nicely with beef. This dish can even be served as a vegetarian entrée or an appetizer.
Turn Turbochef oven on and under ‘Bake’ on the cook wheel, select ‘COOKBOOK’ then under cookbook, select ‘Stuffed Portabella Mushroom’. Press ‘START’ to begin the preheat cycle.
To prepare the Stuffed Portabella Mushroom, begin by cutting the red onion into ¼” thick strips and caramelizing over medium heat in a sauté pan with 1 tablespoon butter or olive oil for about 10 minutes. Next clean the mushrooms, and remove stems and gills and set aside. Mean while, cut spinach into ¼” thick strips. In mixing bowl place spinach, caramelized onions, garlic, salt, pepper, pine nuts and parmesan cheese, then toss with 1 tablespoon of olive oil until well mixed. Brush baking dish with remaining tablespoon of olive oil and place mushroom tops, top side down on a sheet pan. Place 2 mounds of spinach mixture into the mushroom caps, top with 4-5 slices of roasted red pepper, and sprinkle with Manchego cheese. Place in the oven. Press ‘START’ again and bake under ‘Stuffed Portabella Mushroom’ for 2½ minutes. Cut into halves to serve as a side dish or quarters to serve as an appetizer. Serve one cap per person if serving as an entrée.

- 20 pieces of fresh asparagus, pencil thin prefered
- 1 tbsp. of fresh lemon juice
- 1 tbsp. of sesame oil
- 1 tbsp. of soy sauce
- 1 clove of fresh garlic, minced
- 1 tbsp. of toasted or black seasame seeds
Asparagus is a wonderful vegetable that is perfect for entertaining but timing of when it is done is always a challenge. With the TurboChef speedcook oven, the asparagus comes out ‘al dente’ and bright green. You can put it into the oven when your guests sit down and serve perfect asparagus every time.
Turn the TurboChef oven on and under ‘Bake’ on the cook wheel, select ‘COOKBOOK’ then under cookbook, select ‘asparagus’. Press ‘START’ to begin the preheat cycle.
To prepare the asparagus, remove the bottom woody part of the stalks of asparagus by finding the natural break toward the bottom. To do this, bend the asparagus stalk and it will break where the woody part meets the more tender part. This is usually the bottom 1 ½” -2” of the stalk. Rinse the asparagus. Wet a paper towel and wrap the towel around the asparagus spears. Wrap the asparagus in the wet towel and wrap the towel in a piece of parchment paper. This will protect it from the heat of the oven and provide a steam. Place the asparagus package into the oven.
Press ‘START’ again and bake under ‘Asparagus’ for 45 seconds. After baking, remove from oven and remove the parchment paper and paper towel. If you want the asparagus more cooked and less ‘al dente’ use the cook more function on the cookwheel. Top with butter and salt, herb de provence butter or the garlic butter spread. If you want a unique flavor or a chilled asparagus use the sauce listed below.
