Breakfast Strata Cooks in 20 Mins

Ingredients
  • Bacon and Swiss
  • 8 c. of sliced sour dough bread 1"x1" (about ½ loaf or 7 slices)
  • 1 c. of green onion
  • 2 c. of cooked bacon strips, diced
  • 2 c. of Gruyere Swiss cheese
  • 6 ea. of eggs
  • 1 qt. of milk
  • 1 tsp. of Dijon mustard
  • ½ tsp. of salt
  • ½ tsp. of white pepper
  • 1/8 tsp. of nutmeg
  • ¼ c. of parsley, fresh, minced
  • Ham and Cheese
  • 8 c. of sliced sour dough bread 1"x1" (about ½ loaf or 7 slices)
  • 1 c. of fresh red bell pepper, diced
  • ½ c. of green onions, sliced
  • 2 c. of ham, diced ½" x ½"
  • 2 c. of sharp cheddar cheese, shredded
  • 6 ea. of eggs
  • 1 qt. of milk
  • 1 tsp. Dijon mustard
  • ½ tsp. of salt
  • ½ tsp. of white pepper
  • ¼ c. of parsley, fresh, minced
  • Spinach and Onion
  • 8 c. of sliced sour dough bread 1"x1" (about ½ loaf or 7 slices)
  • 1 caramelized onion
  • 2 boxes of frozen spinach, thawed and drained
  • 2 c. of Gruyere Swiss cheese
  • 6 ea. of eggs
  • 1 qt. of milk
  • 1 tsp. of Dijon mustard
  • ½ tsp. of salt
  • ½ tsp. of white pepper
  • 1/8 tsp. of nutmeg
  • ¼ c. of parsley, fresh, minced

Instructions

Sunday Brunch is easy with these make-ahead breakfast stratas. With three different recipes you can please everyone.

To prepare Breakfast Strata with Bacon and Swiss, cut bread into 1” squares and place half of bread in bottom of a 9”x13” ceramic or Pyrex dish sprayed with Pam spray. Mix onions, and bacon together and sprinkle on top of bread. Next, sprinkle cheese on top of bacon and top with remaining bread cubes. Wisk together eggs, milk, mustard, salt, pepper, nutmeg and parsley and pour batter over bread mixture. Cover with plastic wrap and refrigerate overnight.

To prepare Breakfast Strata with ham and cheese, cut bread into 1” squares and place half of bread in bottom of a 9”x13” ceramic or Pyrex dish sprayed with Pam spray. Mix diced ham, red pepper and onions together and sprinkle on top of bread. Next, sprinkle cheese on top of ham and top with remaining bread cubes. Wisk together eggs, milk, mustard, salt, pepper, nutmeg and parsley and pour batter over bread mixture. Cover with plastic wrap and refrigerate overnight.

To prepare Breakfast Strata with spinach and onion, caramelize about 1 ½ cup diced onion in a sauté pan for about 15 minutes or until onions turn brown and develop a sweet flavor. Cut bread into 1” squares and place half of bread in bottom of a 9”x13” ceramic or Pyrex dish sprayed with Pam spray. Drain spinach and squeeze it until it is fairly dry. Sprinkle onions and spinach on top of bread. Next, sprinkle cheese on top of spinach and top with remaining bread cubes and tomatoes that have been well drained and squeezed until fairly dry. Wisk together eggs, milk, mustard, salt, pepper, nutmeg and parsley and pour batter over bread mixture. Cover with plastic wrap and refrigerate overnight.

The Next day, turn Turbochef oven on by turning oven to ‘Bake’ on the cook wheel, select ‘COOKBOOK’ then under cookbook, select ‘Breakfast Strata’. Press ‘START’ to begin the preheat cycle.

Remove plastic wrap from dish and place in oven, once oven has preheated. Press ‘START’ again and bake under ‘Breakfast Strata’ for 20 minutes. Serve with assorted pastries and fresh fruit for a delicious brunch.
