Stuffed Mushrooms Cooks in 18.5 Mins

Serves: 10 to 20

Ingredients
  • 20 ea. of fresh mushrooms, large
  • 1 c. of Parmesano Reggiano cheese, grated
  • ½ c. of wheat germ
  • ½ c. of fresh parsley, finely chopped
  • ½ c. of onion, grated
  • 1 tbsp. of fresh garlic, minced
  • 1 tsp. of salt
  • 1 tsp. of black pepper
  • 1 tsp. of dry oregano, whole
  • 2/3 c. of olive oil

Instructions

Stuffed mushrooms are always a hit at a cocktail party but they take so long to bake it is hard to keep up with it and still be a good hostess. With a 2½ minute cooking time, you can put them back on the menu.

Turn Turbochef oven on and under ‘Bake’ on the cook wheel, select ‘COOKBOOK’ then under Cookbook, select ‘Stuffed Mushrooms’. Press ‘START’ to begin the preheat cycle.

To prepare the Stuffed Mushrooms, wash mushrooms and remove stems from the tops. Finely chop the stems for the stuffing mix. Grate onion and mince parsley. In a mixing bowl, place the chopped stems, parmesan cheese, parsley, wheat germ, grated onion, garlic, salt, black pepper, oregano and 1/3 cup olive oil. Mix well. Place about 1 tablespoon of the mixture into each mushroom cap.

Place mushrooms on a sheet pan. Before baking, drizzle a small amount of olive oil over top of stuffed mushrooms. Press ‘START’ again and bake under ‘Stuffed Mushrooms’ for 2½ minutes for 10 mushrooms or 3½ minutes for 20 mushrooms.

Serve hot.
