Southwestern Beef Empanadas

- ½ lb. of ground beef
- ¼ c. of onion, diced ¼ "
- 2 oz. of canned green chilies, diced
- ½ tsp. of pepper
- ½ tsp. of salt
- 1/8 tsp. of chipotle powder, dried
- 1 tube (8 ea.) of home-style refridgerated biscuit dough
- 1/3 c. of Pepperjack cheese, finely shredded
These spicy Southwestern Beef Empenadas are great for an appetizer or a casual dinner party. So easy but so tasty.
Turn Turbochef oven on by turning oven to ‘Bake’ on the cook wheel, select ‘COOKBOOK’ then under cookbook, select ‘Southwestern Beef Bites’. Press ‘START’ to begin the preheat cycle.
To prepare the Southwestern Beef Bites, dice onion and sauté with ground beef, green chilies and spices. Cook until the beef is browned and the onions are transparent. Strain of any excess fat. Divide each biscuit into three equal pieces to yield 24 pieces. Grease two mini muffin tins with that will hold 12 mini muffins per tin. Press a third of a biscuit into each muffin cup building up the sides. Spoon about 1-1 ½ teaspoons of the Southwestern beef mix into each muffin cup and top with a pinch of pepperjack cheese. Place both pans into the oven. Press ‘START’ again and bake under ‘Southwestern Beef Bites’ for 3 minutes.
