Ginger Salmon with Baby Bok Choy Cooks in 7 Mins

Ingredients
  • 2 ea. of salmon filet, boneless, 1 ¼" to 1 ½" thick
  • 2 ea. of baby bok choy
  • 1 c. of snow peas
  • ¼ c. of fresh ginger, finely chopped
  • 1 lime rind, grated
  • 1 tbsp. of fresh lime juice (about 1 lime)
  • 1 clove of garlic, minced
  • 1/3 c. of rice wine vinegar
  • 1/3 c. of soy sauce
  • 2 tbsp. of sesame oil, toasted
  • 3 tbsp. of dark brown sugar

Instructions

Salmon is a wonderful fish that lends itself to marinades because of the oils in the fish. This ginger marinade makes a delicious salmon and is paired nicely with grilled baby bok choy, snow peas and wasabi mashed potatoes for an Asian flavor.

Turn Turbochef oven on by turning oven to ‘Bake’ on the cook wheel, select ‘COOKBOOK’ then under cookbook, select ‘Ginger Salmon with Baby Bok Choy’. Spray a grill pan with oil spray and put into the oven to heat. Press ‘START’ to begin the preheat cycle.

To prepare the marinade for the salmon, mix all the ingredients in a large bowl. Place salmon filets into the marinade and set aside. Note: marinate no longer than 30 minutes from the time you are going to cook the meal.

To prepare the baby bok choy, place a sauce pan of water on the stove and bring to a boil. Once water is boiling, blanch the baby bok choy for approximately 1 minute, just enough to soften slightly and brighten the color. Remove the baby bok choy with tongs and plunge into cold water once blanched. Hold until needed. Keep the sauce pan of boiling water on the stove to use in preparing the snow peas.

To prepare the Ginger Salmon with Baby Bok Choy, remove grill pan from the oven, using good hot mitts as the pan will be very hot. Remove the salmon filets from the marinade, brush with peanut oil or canola oil, and place onto the sizzling hot grill pan. Using tongs place the blanched baby bok choy next to the salmon on the same grill pan and place the pan back into the oven.

Press ‘START’ again and bake under ‘Ginger Salmon with Baby Bok Choy’ for 3 minutes, for medium rare. If you want the salmon cooked more, use the cook more function on the oven.

While the salmon and bok choy are cooking, place the snow peas into the boiling water, still on the stove, and cook for 2 to 3 minutes. Drain water and use as a side dish along with wasabi mashed potatoes for the entrée.

When salmon and bok choy are cooked, remove from oven, plate and serve.
