Raspberry Clafouti with Bourbon Vanilla Sorbet

Serves: 4
- 1 Pint Raspberries
- 1 Egg
- 1 Vanilla
- 50g Sugar
- 20g AP Flour
- A pinch of salt
- 60g Crème Fraiche
- 60ml Whole Milk
- 4 Mint leaves
- 1 Tbsp. Butter
- 1 Tbsp. Sugar
- In a stainless steel mixing bowl, add the egg and the 50 grams of sugar
- Whisk for about 5 - 10 minutes or until the mixture turns white
- Add AP flour, crème fraiche, milk, vanilla and salt
- Butter four ramekins and cover with sugar. Place the raspberries in the ramekins
